Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turnip cabbages
Form the edible shell that holds the stuffing while cooking.
Raw veal
Binds the stuffing and sets firm as it cooks, giving a tender, cohesive filling.
Butter
Adds richness and fat to the pan, promoting flavour and gentle browning.
Veal gravy
Provides moisture and savoury flavour while the cabbages cook slowly.
Espagnole sauce
Thickens and enriches the reduced gravy, giving the final sauce body and depth.

The step that matters

Reduce the sauce to the proper consistency. Reducing concentrates flavour and thickens the gravy as water evaporates. Too little reduction leaves it thin and watery; too much makes it overly salty and syrupy. Skimming grease first keeps the sauce clean-tasting.

Swap the cabbage

How well each one fits the dish's main ingredients (turnip, veal, meat, pepper, nutmeg, chive, butter):

  1. Leekfits better
  2. Shallotfits better
  3. Spinachfits better
  4. Cabbagethe original

Fit is the average pairing score against turnip, veal, meat, pepper, nutmeg, chive, butter. Candidates are from the same food group and used in at least 100 recipes.
