Why it works: Pork and onion are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,214 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Roast Fillet of Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 350°F (175°C).

  2. Stuff the cavity of the veal fillet with a mixture of bread crumbs, salt pork, onion, sweet herbs, salt, and pepper. Fill any gaps with the remaining stuffing and secure with skewers.

  3. Place the stuffed fillet in a baking pan and add 1 teacup of water.

Roast

  1. Cover and roast for 1.5 hours, basting occasionally.

  2. Remove the cover and continue roasting until the fillet is a rich brown.

What each ingredient does

Veal fillet
Forms the main body of the dish and is cooked slowly to tender juiciness.
Bread crumbs
Absorb juices from the stuffing, keeping the filling moist and lightly textured.
Salt pork
Renders fat into the stuffing, adding richness and savory flavor as it cooks.
Onion
Adds aroma and sweetness as it softens and flavors the stuffing during roasting.

The step that matters

Remove the cover and continue roasting until the fillet is a rich brown. Covered roasting steams the meat, so browning only happens once the cover is off. Watching color rather than just the clock shows when surface browning, which adds flavor, has developed.

Swap the onion

How well each one fits the dish's main ingredients (veal, bread, pork, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against veal, bread, pork, pepper. Candidates are from the same food group and used in at least 100 recipes.
