What each ingredient does

Small fish
Forms the main body of the dish and becomes flaky and tender when fried.
Bread crumbs
Soak up milk and egg to form a moist stuffing that keeps the fish juicy inside.
2 egg yolks
Bind the soaked bread crumbs into a cohesive stuffing.
Flour
Dusts the fish so the surface dries and browns evenly in the frying fat.
Juice of 2 lemons
Acidity in the marinade brightens the flavor and slightly firms the fish flesh.

The step that matters

Fry until very dry and crisp. Fish held in a marinade and stuffed with moist crumbs can stay soggy if the surface is not dried and fried long enough. Flour dusting and hot fat drive off surface moisture and create a crisp, browned crust.

Swap the parsley

How well each one fits the dish's main ingredients (fish, lemon, pepper, bread, milk, egg, flour):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Marjoramfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against fish, lemon, pepper, bread, milk, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
