Lobster Saucb

Ingredients

Directions

  1. Mash the fresh eggs of a hen lobster and strain them, reserving the liquid.

  2. Divide the lobster flesh into small pieces and dust with flour to prevent sticking.

  3. Add the lobster pieces to a white sauce and simmer for one minute.

  4. Stir in the reserved eggs; the mixture will turn brilliant red.

  5. Remove from heat immediately to prevent darkening.

  6. Serve with anchovy or lemon at the table if desired.
