Roast Prairie Chickens

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare the prairie chickens by cleaning them thoroughly.

  2. Stuff the chickens with a mixture of bread crumbs, chopped salt pork, sage, onion, pepper, and coarse sea salt.

Roast and serve

  1. Roast the chickens slowly at 300°F (150°C) for the first half hour.

  2. Increase the heat to 400°F (200°C) and roast briskly for the last half hour.

  3. Serve with mushroom sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prairie chickens
Provide the main meat, which is cooked whole and stuffed.
Bread crumbs
Absorb juices and fat in the stuffing, keeping it moist and lightly textured.
Salt pork
Adds fat and savoury flavour that bastes the bird as it renders during roasting.
Onion
Adds aromatic sweetness and moisture to the stuffing as it softens.

The step that matters

Two-stage roasting. Slow roasting at 300°F first cooks the bird through gently, so the meat stays tender; the final blast at 400°F browns the skin. Skipping the slow start or staying low too long risks dry meat or pale skin.

Swap the sage

How well each one fits the dish's main ingredients (chicken, bread, pork, onion, pepper):

  1. Garlicfits better
  2. Thymefits better
  3. Marjoramfits about as well
  4. Sagethe original

Fit is the average pairing score against chicken, bread, pork, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
