What each ingredient does

Celery roots and stems
Provide the celery flavour that infuses into the vinegar.
Vinegar
Acts as the liquid that extracts and carries the celery flavour.
Peppercorns
Add a sharp, aromatic warmth to the infused vinegar.
Cayenne pepper
Adds a light background heat in small amounts.

The step that matters

Sealing and storing the jar. Keeping the jar airtight limits contact with air and contamination while the flavours infuse over weeks, so the vinegar stays clean-tasting and stable.

Swap the celery

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
