Why it works: Parsley and chive match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 2,150 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Omelet Wtth Herbs
Ingredients
Directions
Prepare the eggs
Beat the eggs in a bowl until well mixed.
Add the chopped parsley and chives to the eggs and mix well.
Cook the omelet
Melt the butter in a pan over medium heat.
Pour the egg mixture into the pan once the butter is melted.
Cook until the edges are set, then gently lift the edges to allow uncooked egg to flow underneath.
When the omelet is half done, drop a piece of butter the size of a nutmeg under it to prevent sticking.
Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Set into a tender structure as they cook, forming the body of the omelet.
- Butter
- Adds richness and flavor, and keeps the omelet from sticking to the pan.
- Parsley
- Adds fresh, green aroma and a mild herbal flavor to the eggs.
- Chives
- Add a mild onion-like flavor and aroma to the eggs.
The step that matters
Lifting the edges while the eggs cook. Egg proteins set as heat denatures them, so lifting the set edges lets liquid egg flow underneath and cook evenly. Cooking too long or too hot makes the eggs tough and dry.
Swap the parsley
How well each one fits the dish's main ingredients (egg, chive, butter):
- Capersfits better
- Tarragonfits about as well
- Parsleythe original
- Nutmegfits less well
Fit is the average pairing score against egg, chive, butter. Candidates are from the same food group and used in at least 100 recipes.
