What each ingredient does

Isinglass
Gelatin-like setting agent that firms the milk mixture into a sliceable pudding.
Milk
Forms the creamy liquid base that the isinglass sets into a pudding.
Blanched almonds, powdered
Supplies the nutty almond flavour and body throughout the pudding.

The step that matters

Dissolving the isinglass fully. Isinglass must be completely dissolved in the hot milk before straining; undissolved pieces leave lumps and weaken the set, which is why the mixture is boiled and then strained.

Swap the almond

How well each one fits the dish's main ingredients (milk, sugar, cream):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Pistachiofits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
