Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooked until jelly-like, it forms the body and thick texture of the pudding.
Milk
Adds moisture and richness, softening the rice and giving a creamy texture.
Currant jelly or bright juice
Adds tart fruit flavour and colour to the pudding.

The step that matters

Cook the rice thoroughly in water. Rice must be cooked until fully soft so its starch swells and gelatinises into a jelly-like body. Undercooked grains stay firm and grainy, and the pudding will not set smoothly when it cools.

Swap the currant

How well each one fits the dish's main ingredients (rice, milk, cream):

  1. Coconutfits better
  2. Vanillafits better
  3. Strawberryfits better
  4. Currantthe original

Fit is the average pairing score against rice, milk, cream. Candidates are from the same food group and used in at least 100 recipes.
