Party Puffs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Make a rich paste and roll it out thin.

  2. Cut the rolled paste with a biscuit cutter.

  3. Grease a shallow tin pan with butter and place the cut paste on it.

  4. Roll out puff paste and cut it to the same size.

  5. Cut a hole in the center of each puff paste piece with a small glass, leaving a rim.

  6. Place the puff paste pieces on top of the first pieces of paste.

  7. Brush the tops with sweetened egg white for a better appearance.

  8. Bake in a 400°F (200°C) oven until light brown.

  9. Fill the baked puffs with jelly or sweetmeats.
