What each ingredient does

Indian meal
Cornmeal thickens the water into a gruel as its starch swells during boiling.
Flour
Adds extra starch to help thicken the gruel and give it a smoother body.
New milk
Adds richness and a mild sweetness, softening the gruel's flavor.

The step that matters

Mix the meal and flour with cold water before adding. Starchy meal stirred into hot water without a cold-water slurry clumps as the outside gelatinizes first, leaving lumps. Blending it smooth in cold water lets the starch disperse evenly before it thickens.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, milk):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Nutmegthe original
  4. Turmericfits less well

Fit is the average pairing score against flour, milk. Candidates are from the same food group and used in at least 100 recipes.
