Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Browning builds savoury flavour, and long simmering breaks down connective tissue for a rich broth.
Onions
Frying until brown adds sweetness and deep savoury colour to the broth.
Carrot
Adds natural sweetness and body as it softens during the long simmer.
Turnip
Adds mild sweetness and body to the broth as it cooks down.

The step that matters

Simmer slowly and skim the foam. A gentle simmer keeps the broth clear and lets the beef become tender. Boiling hard emulsifies fat and proteins into the liquid, making it cloudy and greasy, so the foam must be skimmed off.

Swap the onion
