Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides lean meat that gives the sausage its body and bite.
Pork
Adds meat flavour and a fuller, juicier texture to the mixture.
Inside fat of the pig
Supplies fat that keeps the mixture moist and tender as it cooks.
Coarse sea salt
Seasons the meat and helps draw out and bind its proteins for a firmer mixture.
Butter
Fat for frying that adds richness and helps the cakes brown.

The step that matters

Chopping the meat and fat finely and evenly. Fine, even chopping spreads fat and lean meat through the whole mixture, so each cake stays moist and holds together instead of crumbling or drying out in places.

Swap the mace

How well each one fits the dish's main ingredients (veal, pork, pepper, nutmeg, butter):
