Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked chicken breast
Provides the main body of the filling.
White sauce
Binds the minced filling and keeps it moist.
Puff pastry
Forms a shell that puffs and crisps when fried.
Lard
Frying fat that conducts heat to brown the pastry evenly.

The step that matters

Frying the puffs in boiling lard. If the lard is not hot enough, the pastry absorbs fat and turns greasy instead of crisp. Sealed edges that open in the hot fat let the filling leak out.
