Partridge Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the birds

  1. Pluck and draw the partridges.

  2. Carve three of them into six pieces each: wings, legs, breast, neck, head, and back.

  3. Keep one bird whole and trussed.

Assemble the pie

  1. Season the pieces with pepper, salt, and ground mace, and place them in a deep dish.

  2. Stuff the whole bird and place it in the center of the dish, breast side up.

  3. Pour the beef gravy over the game, adding the roasted shallots and allspice.

  4. Mix in the yolks of the hard boiled eggs and ketchup.

  5. Cover the dish with puff pastry and bake in a moderately heated oven at 350°F (175°C) until golden.

What each ingredient does

Partridges
Provide the main meat, with dark and light pieces giving varied texture and flavour.
Beef gravy
Adds moisture and savoury depth, keeping the game from drying during baking.
Hard boiled egg yolks
Enrich the filling and help thicken it as it sets, giving a smooth, rich body.
Puff pastry
Forms a crisp, golden, flaky crust that browns in the oven.
Roasted shallots
Add mild sweetness and aroma that deepen the savoury flavour of the filling.

The step that matters

Covering and baking until golden. The pastry must be fully covered and baked at a moderate heat so the crust cooks through and browns without the filling drying out. Cooking too hot can scorch the pastry before the game is tender.

Swap the mace

How well each one fits the dish's main ingredients (pepper, beef, shallot, corn, allspice, egg, ketchup):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against pepper, beef, shallot, corn, allspice, egg, ketchup. Candidates are from the same food group and used in at least 100 recipes.
