Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce and bind it into a smooth emulsion as they gently heat.
Vinegar
Adds sharp acidity that cuts through the richness of the yolks.
Anchovies
Contribute salty, savoury depth to the sauce.
Ketchup
Adds sweetness and tangy depth to balance the vinegar.

The step that matters

Heating the sauce gently with the egg yolks. Egg yolks set at low temperatures, but too much heat scrambles them into lumps. Gentle heat with constant tossing lets the yolks thicken the liquid evenly into a smooth sauce.
