  1. Season the veal with coarse sea salt and black pepper.

  2. Optionally, add slices of lean bacon or ham.

  3. For a richer flavor, mix in mace, Cayenne, nutmeg, forcemeat, and eggs.

  4. If desired, include truffles, morels, mushrooms, sweetbreads, and blanched cock's-combs.

  5. Bake the pie and pour in rich gravy after baking.
