Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wash and dry currants, then place them near the fire to dry completely.

  2. Dust currants with dry flour and shake to coat.

  3. Beat eggs separately until very fluffy, then strain them.

  4. Rub sugar to a powder on a clean board and sift through a fine sieve.

  5. Pare lemon peel thinly, mix with a little sugar in a mortar to form a paste, then add a little wine or cream to combine.

  6. Combine all ingredients in a bowl and beat thoroughly until well incorporated.

  7. Preheat the oven to 400°F (200°C).

  8. If the batter is too quick, cover the cake with paper to prevent burning.

  9. Check if the cake is done by inserting a bright knife into the center; if it comes out clean, the cake is ready.
