What each ingredient does

Eggs
Egg proteins set as they heat, forming the firm white around a soft center.
Thin slices of bread
Toast gives a crisp, sturdy base that supports the soft poached eggs.
Butter
Adds richness and fat to the toast, balancing the lean egg white.

The step that matters

Let the eggs sit until the whites set. Egg white proteins coagulate as they heat, so the whites firm up gradually. Moving or disturbing the eggs before they set can tear the whites and spread them into the water.
