Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Cut the beef steak into pieces about 4 inches wide, removing any gristle or skin.

  2. Mix black pepper, cayenne, allspice, and salt in a bowl.

  3. Sprinkle the seasoning over the steak pieces and dredge them lightly with flour.

Assemble and bake

  1. Layer the seasoned steak in a pie dish, adding more seasoning and flour as you go.

  2. Pour water or gravy and mushroom ketchup over the top.

  3. Cover with pie crust and bake in a moderate oven at 350°F (175°C) for about 1.5 hours.

What each ingredient does

Beef steak
Provides the meat that becomes tender during the long, slow bake.
Flour
Lightly coats the beef, helping the seasoning cling and thickening the juices.
Water or gravy
Adds moisture so the meat braises and stays juicy in the pie.
Mushroom ketchup
Adds savory, umami depth to the meat and its cooking liquid.
