Why it works: Horse and radish work together. They rank in the top 4% of all ingredient pairs, and cooks put them together in 529 recipes. Both carry 2-methylbutyraldehyde, which smells malty, chocolate. The science ↓

Roasting Meat

Ingredients

Directions

Roast the meat

  1. Hang the meat so the thickest part is closest to the fire, but not too near at first to avoid scorching.

  2. Melt a little clean dripping in the dripping pan and baste the meat immediately.

  3. Continue to baste every 15 minutes until 30 minutes before it's done.

  4. Remove the meat from the fire and clean out any grit from the dripping pan.

  5. Take off the paper covering the fat, adjust the fire to be hot and clear, and baste the meat well.

  6. Sprinkle coarse sea salt over the joint and dredge it with flour.

  7. Return the meat to the fire and roast until done, ensuring the outside is browned and frothed.

  8. Do not baste for the last 15 minutes of cooking.

  9. Roast for about 2.5 hours, adjusting time for cold weather.

Serve

  1. Garnish with scraped horse-radish and serve with greens and potatoes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sirloin roast
Provides the main cut of meat, which cooks through slowly over the fire.
Clean dripping
Bastes the meat, adding fat that helps the surface brown and crisp.
Flour
Dredged over the joint to help form a browned, crisp outer crust.

The step that matters

Adjusting the fire and basting before the final roast. Basting stops the surface drying out, while a hot, clear fire drives browning and frothing. Stopping basting in the last 15 minutes lets the crust set and avoids soggy or uneven browning.

Swap the potato

How well each one fits the dish's main ingredients (flour, horse, radish):

  1. Mustardfits better
  2. Beetrootfits better
  3. Turnipfits better
  4. Potatothe original

Fit is the average pairing score against flour, horse, radish. Candidates are from the same food group and used in at least 100 recipes.
