What each ingredient does

Mutton
Provides the meat and rich, savory flavor that gives the broth its body.
Onions
Add sweetness and aromatic depth as they soften into the broth.
Carrots
Contribute gentle sweetness and color to the finished broth.
Turnips
Add mild, slightly sweet flavor and body to the simmered broth.
Celery
Adds aromatic, herbal background flavor to the broth.

The step that matters

Skim off the scum. Foam and impurities rising early in the simmer can cloud the broth and taint its flavor. Removing them until none appear keeps the broth clear and clean-tasting.
