What each ingredient does

Venison
Provides the main meat flavor and tender, savory body to the soup.
Ham
Adds salty, savory depth that seasons the broth as it simmers.
Butter
Adds richness and fat, giving the soup a rounder, silkier mouthfeel.
Port or madeira wine
Adds sweetness and aromatic depth that rounds out the savory broth.
Celery
Contributes a fresh, vegetal aroma that supports the broth's flavor.
Onion
Builds aromatic sweetness as it softens into the stewing liquid.

The step that matters

Adding the butter rolled in flour. Flour-coated butter disperses and thickens the broth best when stirred into gently simmering liquid. Added to a hard boil, the flour can clump and the butter can separate into greasy droplets.

Swap the mace

How well each one fits the dish's main ingredients (venison, ham, onion, pepper, meat, celery, butter):

  1. Thymefits better
  2. Parsleyfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against venison, ham, onion, pepper, meat, celery, butter. Candidates are from the same food group and used in at least 100 recipes.
