Ingredients

Directions

  1. Stew assorted seasonal vegetables with savoury herbs, chilis, shallots, and garlic in water for several hours until reduced to a pulp.

  2. Season the mixture with mace, whole black pepper, coarse sea salt, mushroom ketchup, and curry powder.

  3. Strain the pulp and keep it for a few days to use in other soups.

  4. If browning is needed, fry sliced onions in butter and add to the soup.
