Why it works: Shallot and horseradish match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 376 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Sirloin of Beef Roasted
Ingredients
Directions
Prepare the joint
Break the upper part of the chine-bones.
Cut the broken bones out.
Skewer the bones in place to prevent them from drawing up.
Run a spit under the bark at the thin end.
Bring the spit out between the joints.
Cover the fat with buttered paper.
Lift the fat from the inside of the sirloin with a sharp knife.
Mince the meat close to the bone.
Make the stuffing
Chop the suet finely.
Mix the suet with bread crumbs, lemon peel, thyme, and minced shallot.
Combine the mixture with port wine.
Put the mixture back into the sirloin.
Roast and serve
Cover with the skin and fat.
Skewer it down neatly.
Cover with paper.
Roast gently for 3 to 4 hours.
Do not remove the paper until the joint is served.
Garnish with scraped horseradish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Sirloin of beef
- Forms the main roast; its meat is the body of the dish.
- Suet
- Adds fat that keeps the lean meat moist during long gentle roasting.
- Grated bread crumbs
- Soak up the port and fat, giving the stuffing a soft, cohesive texture.
- Port wine
- Adds sweetness and depth of flavour to the stuffing.
- Shallot
- Contributes a mild aromatic onion flavour to the stuffing.
The step that matters
Cover the joint with paper and leave it covered. The paper shields the fat and meat surface from direct heat during the long roast, so the outside does not dry or over-brown before the interior cooks through. Removing it early loses this protection and the moisture kept inside.
