Fillet of Veal Roasted

Ingredients

Directions

Prepare the fillet

  1. Cut off the knuckle of the leg of veal above the joint to create a fillet.

  2. Remove the bone and fill the space with stuffing.

  3. Place a layer of stuffing under the fat.

  4. Truss the fillet into a good shape by drawing the fat around and tying it with tape.

Roast and serve

  1. Wrap the fillet in paper and place it a good distance from the fire.

  2. Roast until thoroughly cooked, ensuring no red gravy remains.

  3. Serve with melted butter poured over and gravy around.

  4. Accompany with ham or bacon and fresh cucumbers if in season.

What each ingredient does

Leg of veal
Forms the main body of the fillet, providing the meat that is roasted and served.
Stuffing (forcemeat)
Fills the space left by the bone and adds moisture and flavour inside the fillet.
Fat (in the method)
Covers the fillet and bastes the meat as it roasts, keeping it moist.

The step that matters

Roast until thoroughly cooked. Veal must be cooked all the way through, and the juices running clear with no red gravy show it is done. Placing the wrapped fillet a good distance from the fire lets the heat penetrate gently so the outside does not burn before the centre is cooked.

Flavor stand-ins for the cucumber

The recipe marks cucumber as optional. How well each one fits the dish's main ingredients (veal, butter, ham):

  1. Onionbetter flavor fit
  2. Leekbetter flavor fit
  3. Potatobetter flavor fit
  4. Cucumberthe original

Fit is the average pairing score against veal, butter, ham. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
