Veal Olives

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut long thin slices of veal and beat them.

  2. Lay the veal slices on thin slices of fat bacon.

  3. Spread a layer of forcemeat seasoned with shredded shallot and cayenne over the veal.

  4. Roll the veal tightly, about the size of 2 fingers and 2 to 3 inches long.

  5. Fasten the rolls with small skewers and brush with egg.

  6. Bake in a 400°F (200°C) oven until light brown.

  7. Serve with brown gravy that has mushrooms boiled in it.

  8. Garnish with fried balls.
