What each ingredient does

Veal
Is the main protein, becoming tender and cooked through during gentle simmering.
Flour
Thickens the sauce, giving it body as the liquid is added.
Butter
Adds fat for richness and helps the meat brown during the first cooking.
Curry powder
Provides the main spice flavour and aroma of the dish.
Onion
Adds savoury sweetness and body to the sauce as it softens.

The step that matters

Simmer gently until the veal is cooked through. Boiling vigorously toughens meat proteins and can make the veal dry and stringy. Gentle heat cooks it evenly and keeps it tender while the sauce thickens.
