Pork Cutlets

Ingredients

Directions

  1. Trim the pork chops neatly and broil them on a grill until cooked.

  2. Alternatively, fry the chops in salad oil and serve with Sauce Robert or gherkin sauce.

  3. For marinated cutlets, soak them for 4 hours in oil with sliced onion, parsley, bay leaf, pepper, and coarse sea salt, then fry in the marinade and serve with tomato sauce.

  4. To prepare with butter, melt a small piece in a frying pan, add bay leaves, lemon slices, shredded parsley and thyme, sage, mace, allspice, and white wine.

  5. Add the cutlets, cover, and cook until two-thirds done, then remove, dry, dip in egg, coat with bread crumbs, and fry quickly.

  6. Serve with the sauce from the cutlets, thickened with flour and butter, and stir in a little mustard just before serving.
