What each ingredient does

Chicken
Provides the main protein, which becomes tender as it cooks gently in the sauce.
Butter
Carries the curry spices and adds richness to the sweated base.
Onion
Softens and sweetens as it sweats, adding body to the sauce.
Curry powder
Supplies the main spice flavour and aroma of the dish.
Flour
Thickens the sauce as it cooks with the fat and spices.
Lean ham
Adds savoury, salty depth to the sauce.

The step that matters

Cooking the curry powder and flour. Frying the spices and flour in fat for several minutes toasts the spices and cooks out the raw floury taste. Stopping too early leaves the sauce dusty and flat, and the flour may not thicken evenly.

Swap the onion
