White Sauce

Ingredients

Directions

  1. In a pot, combine the knuckle of veal, ham, cloves, mace, bay leaves, parsley, thyme, onion, carrot, and turnip with water.

  2. Simmer until the broth is flavorful.

  3. Melt butter in a separate pan, then add flour to create a roux.

  4. Once the flour is cooked, gradually stir in the strained broth until well mixed.

  5. Let it boil for 1 hour, then strain again.

  6. When ready to serve, heat the sauce, add enough cream to make it rich and white, and boil quickly while stirring until thickened.

  7. Optionally, add a squeeze of lemon before serving.
