  4. Rub the mixture into the beef thoroughly and let it sit for 14 days, turning it daily.

  5. Hang the beef in a dry place and smoke it if possible.

Cook

  1. When ready to use, boil gently or bake in a deep dish covered with coarse pastry.

  2. For stewing, cover the beef with just enough water and simmer gently for 4-6 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Is the main cut that is cured, then cooked until tender.
Common salt
Draws moisture out of the meat and helps preserve it during curing.
Brown sugar
Adds sweetness and balances the salty, spiced cure.
Black pepper
Adds sharp, aromatic heat to the spice rub on the surface.
Cloves
Contribute a warm, aromatic flavour to the cure.
Nutmeg
Contributes a warm, aromatic flavour to the cure.

The step that matters

Rubbing the cure in and turning daily over 14 days. Salt and spices must penetrate evenly through the thick cut. Skipping the daily turns leaves some areas under-cured, and uneven salt penetration can let spoilage start in those spots.

Swap the clove

How well each one fits the dish's main ingredients (sugar, pepper, nutmeg, beef):

  1. Cinnamonfits better
  2. Allspicefits about as well
  3. Clovethe original
  4. Cardamomfits about as well

Fit is the average pairing score against sugar, pepper, nutmeg, beef. Candidates are from the same food group and used in at least 100 recipes.
