Puff Paste

Ingredients

Directions

  1. If using salt butter, break it into small pieces and soak in cold water, squeezing to remove excess salt.

  2. Mold the butter until dry and firm, then roll it and refrigerate.

  3. For fresh butter, mold it without soaking.

  4. Weigh 1 lb of butter and 1 lb of sifted flour.

  5. Rub 2 oz of butter into the flour.

  6. Make a well in the center, add 1 teaspoon of salt, and pour in enough cold water to form a paste similar in consistency to the butter.

  7. In summer, ensure the dough is slightly less consistent to prevent the butter from breaking through.

  8. Add 2 well-beaten eggs to the mixture.
