To Pickle Onions

Ingredients

Directions

  1. Choose small button onions of similar size and soak them in warm water to ease peeling.

  2. Peel the onions and place them in a strong brine of salt and water with a small bit of alum until the next day.

  3. Boil the onions in the brine for 1 minute, then drain and dry them with a cloth.

  4. Place the onions in a jar and pour boiling hot brine over them.

  5. Cover the jar tightly and let it sit until the next day.

  6. Afterward, drain the onions and place them in cold distilled vinegar.

  7. Add bruised ginger, whole pepper, and optional spices to the jar, ensuring the onions are covered with vinegar.
