An Excellent Method for Making Punch

Ingredients

Directions

Prepare the sugar and lemons

  1. Rub the sugar over the lemons until it absorbs the yellow parts of the skins.

  2. Squeeze the lemon juice onto the sugar and mix well with a bruiser.

Make the punch

  1. Add boiling water until the mixture is cool and to your taste.

  2. Optionally, strain the mixture to remove pulp before adding the spirits.

  3. Mix in equal parts brandy and rum, adjusting the quantity to your preference.

  4. For added richness, mix in 4 pints of porter if using only rum.

What each ingredient does

Lemons
Their juice supplies the sharp acidity that balances the sweetness of the punch.
Sugar
Sweetens the punch and, rubbed on the skins, draws out the aromatic oils from the peel.
Brandy and rum
Provide the alcoholic strength and warming aroma that define the punch.
