Green Peas Soup

Ingredients

Directions

  1. Shell the peas, reserving ½ pint of the best for later.

  2. Wash the shells and boil them in enough water to cover, adding ½ teaspoon of carbonate of soda for 30 minutes.

  3. Rub the boiled shells through a fine colander.

  4. In another pan, combine the remaining peas, onions, lettuces, and bread with 1 quart of water and boil until soft.

  5. Rub this mixture through the colander and combine with the shell liquid.

  6. Mix the butter and flour, then stir into the soup, seasoning with salt and pepper.

  7. Boil the reserved peas in a little water with a pinch of carbonate of soda, then add to the tureen and pour the soup over them.
