Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the marrow

  1. Half boil the marrow.

  2. Peel the marrow.

  3. Cut the marrow into small pieces, removing the seeds and pulp.

Bake

  1. Place the marrow in a flat dish with melted butter.

  2. Season the marrow with pepper and salt.

  3. Bake for about 20 minutes at 350°F (175°C).

Top and finish

  1. Beat the eggs and mix them with bread crumbs, parsley, and leeks.

  2. Pour the egg mixture over the baked marrow and return it to the oven until nicely browned.

  3. Serve with brown sauce.

What each ingredient does

Marrow
Forms the bulk of the dish and becomes soft and tender when baked.
Eggs
Bind the topping and set when baked, helping it hold together and brown.
Bread crumbs
Absorb the egg mixture and add body to the topping as it bakes.
Butter
Adds richness and helps the marrow brown and carry flavour in the dish.

The step that matters

Pour the egg mixture over the baked marrow and return it to the oven until nicely browned.. Eggs set when heated, so the topping needs enough oven time to firm up and brown without drying out. Watching the colour prevents underbaking or scorching.
