No. 531.— Potato Flour
Ingredients
Directions
Peel and wash the potatoes thoroughly.
Grate the potatoes into a large bowl of cold water.
Let the mixture sit until the pulp settles at the bottom and the water clears.
Pour off the water and add more fresh spring water.
Stir the pulp with your hand and rub it through a fine sieve, adding water as needed.
Allow the farina to settle and the water to clear, then pour off the water again.
Repeat the rinsing process until the farina is white and the water is clear.
Spread the farina on flat dishes to dry, covering with paper to keep out dust.
Once dry, pound it to a fine powder and sift it through a sieve.
Store the potato flour in bottles or canisters.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
