Baked Carp

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the carp and stuff it as you would for soles. Sew it up.

  2. Brush the carp all over with egg yolk and cover with breadcrumbs.

  3. Baste with oiled butter and place in a deep baking dish.

Bake

  1. Add stock, sliced onions, bay leaves, herbs, port wine, and anchovies.

  2. Cover the dish and bake at 350°F (175°C) for 1 hour.

Make the gravy and serve

  1. Once done, pour the liquid into a saucepan and keep the fish warm.

  2. Heat the liquid with butter, mustard, a pinch of cayenne, and soy sauce.

  3. Serve the fish garnished with lemon, parsley, and horseradish, with gravy on the side.
