What each ingredient does

Pork
Provides the main lean meat body and savory flavor of the sausage.
Veal
Adds a delicate, tender texture to the mixture.
Beef suet
Adds fat that keeps the sausage moist and juicy as it cooks.
Bread crumb
Soaked crumb absorbs moisture and helps the filling stay tender and bound.
