Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal or tripe
Provides the main meat body and gelatinous richness once stewed slowly.
Cow-heels
Release gelatin during long stewing, thickening the broth and giving it body.
Madeira wine
Adds sweetness and depth of flavour that rounds out the sharp lemon.
Lemon juice
Adds acidity that brightens the rich, long-cooked broth.
Butter
Adds fat that carries flavour and enriches the browned meat.

The step that matters

Skim off the fat. Fat rises and sets on the surface of a long-stewed broth, making it greasy if not removed before the final addition of the balls.

Swap the mace
