What each ingredient does

Walnuts
The nuts are the food being pickled, softened and flavoured by the brine and heat.
Vinegar
Acid that preserves the pickle and gives it its sharp, tangy bite.
Ginger
Adds warm, aromatic spice to the vinegar.

The step that matters

Changing the saltwater every other day during the nine-day soak. Fresh brine keeps the soak clean and the salt concentration steady, so the walnuts cure evenly and spoilage is less likely over the long soak.
