Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green walnuts
Provide the main flavour and the dark, rich juice that forms the base of the ketchup.
Anchovies
Dissolve during boiling to add salty, savoury depth to the sauce.
Coarse sea salt
Draws juice out of the pounded walnuts and helps preserve the mixture.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the ketchup.
Shallots
Add a sharp, savoury aroma that rounds out the spiced base.

The step that matters

Boiling until the anchovies dissolve. Anchovies must break down fully into the liquid, or they stay as gritty bits. Boiling dissolves their protein and fat into the sauce, giving an even texture and savoury depth. Stop too early and the ketchup will be uneven.

Swap the mace

How well each one fits the dish's main ingredients (walnut, clove, pepper, shallot, vinegar):

  1. Tarragonfits better
  2. Allspicefits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against walnut, clove, pepper, shallot, vinegar. Candidates are from the same food group and used in at least 100 recipes.
