What each ingredient does

Celery
Provides the main flavour and body of the sauce as it softens in the liquid.
Milk
Forms the creamy base of the sauce and adds richness.
Butter
Adds fat and richness, and with flour helps thicken the sauce.
Flour
Thickens the sauce when cooked with butter, giving it body.

The step that matters

Thicken the sauce with butter rolled in flour, then boil it again. Flour needs to be cooked with the liquid and brought to a boil to swell and thicken fully. Stopping early leaves the sauce thin, and boiling too hard or too long can cause it to scorch or separate.

Swap the mace

How well each one fits the dish's main ingredients (celery, milk, pepper, nutmeg, butter, flour, cream):

  1. Cinnamonfits better
  2. Parsleyfits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against celery, milk, pepper, nutmeg, butter, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
