Fish-Pies

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. In a dish, combine fish, salt, and sage if using.

  3. Line the edge of the dish with puff pastry.

  4. Place bits of butter on the fish.

  5. Fill the dish with water and cover with puff pastry.

  6. If desired, add gravy instead of water, along with force-meat balls and hard-boiled eggs.

  7. Bake until the pastry is golden and the filling is cooked through.
