What each ingredient does

Veal or beef
Provides the meat that gives the gravy its rich, savory body as it cooks down.
Flour
Dredged onto the browned meat, it helps thicken the broth into a gravy.
Broth
Forms the liquid base that carries the flavor of the meat and aromatics.
Sliced ham
Adds salty, smoky depth to the gravy as it simmers with the meat.
Garlic
Contributes pungent aroma that mellows and sweetens during long gentle simmering.

The step that matters

Turn the meat and brown it well, being careful not to burn it.. Browning builds deep flavor through the Maillard reaction, but burnt meat and fond turn the gravy bitter, so the color should be even golden brown.
