Ingredients

Directions

The book says “a warm oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Mix caraway seeds into the bun dough.

  2. Butter the insides of small tart pans.

  3. Mould the dough into buns and place one in each pan.

  4. Set the buns to rise in a warm place until doubled in size.

Glaze and bake

  1. Beat the egg white until frothy and brush it on the buns.

  2. Sprinkle pounded sugar on top and lightly splash with water.

  3. Bake in a warm oven at 400°F (200°C) for about 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bun dough
Provides the soft, yeasted structure that rises and bakes into the bun crumb.
Caraway seeds
Add the characteristic aroma and a slight crunch throughout the dough.
Egg white
Brushed on top, it sets to a glossy, lightly browned crust.
Pounded sugar
Sprinkled on top, it sweetens the crust and helps it brown in the oven.

The step that matters

Letting the buns rise until doubled. Under-proofed buns stay dense and heavy, while over-proofed buns can collapse or bake flat. Warmth and time drive the yeast to build gas and lift the dough.

Swap the caraway

How well each one fits the dish's main ingredients (egg, sugar):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Carawaythe original
  4. Gingerfits about as well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
