What each ingredient does

Pearl barley
Its starch releases into the water, thickening the drink and giving it body.
Figs
Add sweetness and a mellow fruity flavor to the flavored version.
Raisins
Add sweetness and concentrated fruit flavor to the flavored version.
Liquorice
Adds a distinctive sweet, aromatic flavor to the flavored version.

The step that matters

Boil until reduced to 2 pints, then strain. Reducing by boiling concentrates the barley's starch and flavor, so the drink becomes thicker and more intense. Stopping too early leaves it thin and weak, while over-reducing makes it overly thick and strong.
