Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooks in milk to form a thick base that sets as it cools and holds its shape.
Milk
Cooks the rice and gives the mixture a soft, creamy texture.
Eggs
Bind the cooled rice mixture so it holds its shape and gives structure to the fritters.
Butter
Adds richness and flavor, and browns the fritters when fried.

The step that matters

Let the rice mixture cool fully before cutting. Rice mixtures set as they cool. Cutting while warm causes the pieces to break or lose shape, so the mixture needs to firm up before it is cut and dipped.
