Melon Mangoes

Ingredients

Directions

  1. Cut a small square piece out of one side of the melons and scoop out the seeds.

  2. Mix the seeds with mustard seed and shredded garlic, then fill the melon as much as possible.

  3. Replace the square piece and bind it with small new packthread.

  4. Boil enough vinegar to cover the melons, adding black pepper, Cayenne pepper, salt, and ginger.

  5. Pour the boiling vinegar over the mangoes for four consecutive days, adding flour of mustard and scraped horseradish on the last day just as it boils.

  6. Once cooled, cover the mangoes tightly, ensuring they are well submerged in vinegar.
